Recipe of the week~Cashew Zoodles

One of our favorite dinner recipes! Fast and delicious, this is a MUST try zoodle dish!

Cashew Zoodles



2 Carrots

2 Zucchini

1 tbsp Cilantro, fresh

2 cloves of Garlic

1/2 juice of a Lime

2 tbsp Peanut butter

1 tsp Soy sauce

1/2 tbsp Siracha sauce

3/4 cup Cashews, raw

1. Spiralize your zucchini and carrots and set aside.

2. At medium-high heat, in a large skillet, add peanut butter, hoisin sauce, lime juice and garlic. Stir continuously for 2 to 3 minutes until garlic begins to cook.

3. Add in the zucchini, carrots and cashews. Gently toss the ingredients every few seconds or so for about 4 to 5 minutes until everything is heated through completely.

4. When it is almost ready, throw in your cilantro, give it a good toss and serve immediately. Yum!!
