Garlic Zucchini Noodles

So Delicious! An amazing alternative to pasta! Grab your zucchinis and lets go!


Garlic Zucchini Noodles


 

Ingredients


6 Zucchini

6 tbsp grass-fed butter or ghee

4-6 cloves of garlic

2 handfuls fresh basil leaves, chopped

5 handfuls fresh baby spinach, chopped

2 tsp ground black pepper

Parmesan cheese, grated


1. Using a spiralizer or peeler, create zucchini noodles. If you do not have a sprializer, use a regular vegetable peeler and peel vertically, long, thin strips of zucchini.

2. Heat one tablespoon of grass-fed butter or ghee in a large skillet over medium-high heat. Once skillet is hot add zucchini noodles and cook for 2 to 3 minutes until the noodles are tender, but still have a little bit of crunch.

3. Let your zucchini noodles sit for about 3 minutes to allow release of moisture, then drain noodles in a colander.

4. Wipe your pan and then add remaining butter over low head. Add in minced garlic, and saute for about 5 minutes. Watch your garlic to make sure it does not burn. Add your chopped basil and spinach.

5. After about a minute, turn heat to medium-high and add zucchini noodles back to the skillet. Saute 2 minutes.

6. Season to taste with sea salt and ground pepper. Garnish with grated Parmesan cheese.
